Over the summer I decided to do the Keto diet in order to improve my health. I was told I was infertile due to a condition called Endometriosis and since the doctor told me there was no hope of my husband and I having kids, I decided to take matters in my own hands.
Many have been asking me just what I did to lose so much weight in such a short amount of time. I thought maybe if I broke everything down to the small changes I made that helped me lose the weight, it may help others either lose weight or even just have the strength to start.

- Never having energy; especially with an active 3 year old!
My doctor told me that my health was not good and that if I didn’t take care of my body now, I would have massive complications and I wouldn’t be able to walk on my own after age 40; I was a mess! That is when I took charge.
- 1 Tomato
- 1/2 Red Bell Pepper
- 1 small bag of pasta (any kind)
- 1 cup of Olive Oil
- 1 Garlic Clove
- 1 TBS McCormick’s Garlic and Herb Seasoning
- 1 chicken breast (cut in small pieces)
Poor the 1 cup of Olive Oil in pan; place on Medium Heat. Cut up chicken, tomato and bell pepper in small pieces. Add seasoning and mince garlic; mix everything together until well covered. Place mix into hot oil and cover. Occasionally stir until chicken and oil is now a liquid form (more watery than oil).
Poor mixture in already cook pasta. You can make the pasta first and let it sit while you make chicken. Mix everything together and serve. You can add half an jalapeno for extra spice if you like!
NOTE: Keep remaining pasta in the fridge and eat cold! Very delish as well!
